This week’s release features the long-awaited return of our Chronic Fresh IPA, a bitter, dank, resinous IPA brewed with Warrior, Citra, Simcoe, and Mosaic hops.
A collaboration between Marc (Owner; Head Brewer) and Jessie (Brewer), this “Central Plains” IPA is a combination of the best of what’s old and what’s new. It’s no secret that we love our hoppy beers here at Two Wheel. We’ve done everything from old school, West Coast style IPAs to double dry hopped hazy Pale Ales, and even a Double Milkshake Fruited IPA with lactose and vanilla bean. But for this collaboration, we really wanted to encapsulate the dry, dank, resinous qualities of old school West Coast IPAs that we all fell in love with, and the new and exciting, tropical, fruity hop characteristics that have popped up in the past few years.
First, we started with a perfectly balanced malt base that wouldn’t get in the way of letting the bright hop characteristics shine, but still sweet enough to carry the fruity hop flavors to the front of the palate. The malt profile is dry without being overly thin, and brings with it a slightly sweet flavor that perfectly carries the hop characteristics of this beer. We bittered the absolute ASS off this beer, but didn’t get too carried away insomuch that it becomes astringent. Our 11 herbs and spices of hops in the whirlpool step of the brewing process adds a little more bitterness and, more importantly, huge amounts of fruity hop flavors and aromatics. Finally we dry hop this 7% IPA like a mother with copious amounts of our favorite aromatic hops.
